- 1/2 cup cholesterol-free egg product
- 1/4 cup sugar
- 1/4 tsp. ground cinnamon
- 1-1/2 cups fat-free milk
- 1/4 cup long-grain white rice
- 1/2 cup seedless raisins
- 1 tsp. vanilla extract
Directions

1Combine egg substitute, sugar and cinnamon in small bowl; set aside.

2Heat milk in saucepan just to a boil.

3Stir in rice.

4Return mixture to a boil.

5Reduce heat; cover and simmer for 15 minutes.

6Stir in egg substitute mixture gradually.

7Bring to a boil; reduce heat and simmer, stirring constantly for 2 to 3 minutes or until slightly thickened.

8Stir in raisins and vanilla.

9Spoon into 4 dessert dishes.

10Rice pudding can be served warm or cold.
