  • 1/2 cup cholesterol-free egg product
  • 1/4 cup sugar
  • 1/4 tsp. ground cinnamon
  • 1-1/2 cups fat-free milk
  • 1/4 cup long-grain white rice
  • 1/2 cup seedless raisins
  • 1 tsp. vanilla extract

Directions

    Combine egg substitute, sugar and cinnamon in small bowl; set aside.

    Heat milk in saucepan just to a boil.

    Stir in rice.

    Return mixture to a boil.

    Reduce heat; cover and simmer for 15 minutes.

    Stir in egg substitute mixture gradually.

    Bring to a boil; reduce heat and simmer, stirring constantly for 2 to 3 minutes or until slightly thickened.

    Stir in raisins and vanilla.
