Old Fashioned Salmon Loaf

  • 1 can salmon (red or pink)
  • 3 c. saltine cracker crumbs
  • 1 Tbsp. minced onion
  • 3 Tbsp. minced green pepper
  • 1/8 c. melted butter
  • 1 Tbsp. fresh lemon juice
  • 2 eggs, slightly beaten
  • 3/4 c. liquid (salmon liquid plus milk)

Directions

    Drain and flake salmon, reserving liquid.

    Combine salmon and all ingredients, except eggs and liquid.

    Mix eggs and liquid together.

    Stir carefully into salmon mixture, mixing well.

    Turn into greased loaf pan (9 x 5 x 3-inch).

    Bake at 350° for 45 minutes.

    Let stand for 5 minutes, then unmold on platter.

    Serves 4 to 6.
