Old-Fashioned Strawberry Pie

- 1 1/2 qt. fresh strawberries
- 1 c. sugar
- 1 c. cold water
- 3 Tbsp. cornstarch
- 1/3 c. water
- 1 (9-inch) baked pie shell
- whipped cream
Directions

1Dissolve cornstarch in 1/3 cup of water.

2Wash and hull berries.

3Select 1 cup of poorest berries.

4Add these to sugar and 1 cup of water; bring to a slow boil and boil 15 to 20 minutes. Strain boiled mix through wire sieve, crushing berries with spoon. After juice is squeezed from berries, return juice to pan. Discard berry pulp.

5Place juice over medium heat.

6Stirring constantly, add cornstarch.

7Simmer slowly until thick.

8Remove from heat and cool.

9Add remaining berries to baked pie shell. Cover with sauce.

10Refrigerate.

11Serve with whipped cream.
