- 1/2 c. brown sugar
- 1 tsp. mustard
- 1 tsp. ground cloves
- 1 tsp. cinnamon
- 1 peppercorn
- 1 tsp. paprika
- 1 c. vinegar
- bread crumbs
- whole cloves
Directions

1Ideally, an old ham weighs 16 to 20 pounds.

2Trim well and scrub clean.

3Soak overnight in cold water to cover.

4Put ham in fresh water; bring to boil and pour this water off.

5Repeat if ham is very old and salty.

6With fat side up, bring slowly to boiling and simmer for an hour or more.

7Then add the sugar, spices (except whole cloves) and vinegar.

8Pour all over ham.
-
9Turn ham fat side down and simmer about an hour.
-
10Turn it over again and cook until the skin blisters or it is tender.

11This will take an additional 4 or 5 hours, depending on size of ham.

12Let stand overnight in the water in which the

13ham was cooked.

14Skin, then sprinkle with bread crumbs, a little brown sugar and paprika and brown in the oven.

15Remove from the oven; score and stick with whole cloves.

16Cool thoroughly before slicing thin.
