Ingredients

  • 1 large can white hominy
  • 1 large can yellow hominy
  • 1 pt. sour cream
  • 1 can Ortega chilies, chopped
  • 1/2 medium onion, grated
  • 3 strips bacon, fried and crumbled
  • 4 oz. Cheddar cheese, grated
  • 4 oz. Monterey Jack cheese, grated
  • 1/2 c. butter (1 stick)
  • 1 large onion, minced
  • 1 1/2 lb. mushrooms, sliced thin
  • 2 large cloves garlic, minced
  • 4 eggs
  • 1 c. milk
  • 6 slices egg bread (1/4-inch cubes, white bread is okay)
  • salt and pepper
  • pinch of nutmeg
  • pinch of chili powder

Directions

    Melt butter in large skillet over medium heat.

    Add onion and saute about 5 minutes until tender.

    Add mushrooms and garlic and saute about 3 minutes.

    Remove from heat.

    In a bowl, combine eggs and milk; add bread and blend in seasonings.

    Add mushroom mixture and stir gently.

    Taste and adjust seasoning.

    Spoon into baking dish.

    Bake at 350° for about 1 hour.
