- 3 lbs chicken, cut into 1 1/2 inch cubes
- flour (for dredging)
- salt
- fresh ground pepper
- 3 tablespoons olive oil
- 12 small white pearl onions, whole (from the jar is best)
- 1 garlic clove, finely chopped
- 12 teaspoon thyme
- 12 teaspoon sugar
- 1 12 cups beef stock or 1 12 cups beef bouillon
- 1 cup pitted green olives
- 14 cup chopped parsley
- 2 tablespoons butter
- 2 tablespoons flour
Directions

1Preheat oven to 300.

2Dredge meat in flour, salt, and pepper.

3In dutch oven, heat oil.

4Add meat, brown all sides.

5Add onions, garlic (brown lightly).

6Sprinkle in thyme.

7Add stock.

8Cover, bake 90 minutes.

9Add olives, parsley.

10Cover.

11Cook until tender (about 30 minutes more).

12Blend butter with flour in a small dish.

13Add gradually to meat and stir constantly until thickened.

14Season more to taste.
