  • 1/4 small onion -diced-
  • 1/2 small tomato -diced-
  • 1/4 green pepper -diced-
  • 3 small whole eggs -two if large-
  • 1 salt and pepper

Directions

    in a bowl beat the eggs with salt and pepper.

    in a non-stick frying pan, add teaspoon of margarine, add the onions, mix for 2 mins, add the pepper, mix for another min, add tomato, mix for 2 mins.. then put the onions, peppers and tomato in the bowl with eggs.. mix well.

    in another clean non-stick frying pan, add 1/2 teaspoon of margarine, then add the eggs, when staring to be kinda dry, flip on other side, wait for 2 mins, then serve.
