Ingredients
- 1 tablespoon active dry yeast
- 1 cup warm water
- 1/2 tablespoon kosher salt
- 1 1/2 tablespoons white sugar
- 1/4 cup vegetable oil
- 1 egg
- 1 cup raisins (optional)
- 3 cups bread flour (plus more for kneading)
- 1 egg yolk
- 1 tablespoon water
Directions

1Preheat the oven to 350. Once preheated, turn the oven off.

2Put the warm water in your mixer bowl. Sprinkle the yeast over the water and let sit for 5 minutes.

3Stir in the salt, sugar, oil, and 1 egg until well blended.

4Using the dough hook on your mixer, gradually mix in the raisins and 3 cups bread flour

5Sprinkling with additional flour as needed, mix with the dough hook for 8 minutes

6Shape into balls, cover with warm, wet dough cloth and let rise for one hour in the cooled off oven or until dough rises to double.

7Punch down the dough and divide it into 3 or 8 pieces depending on what shape you want.

8Braid your dough as you wish and let sit to rise a second time.

9Preheat the oven to 400. Whisk together the egg yolk and tablespoon of water. Brush over the top of the challah. Bake for 30-35 minutes until the bread is golden brown.

10Enjoy! And don't forget to use the leftover challah for french toast!
