- 1 small onion
- 1 Tbsp. butter
- 1 lb. fish fillets
- 1/4 c. lemon juice
- 1/2 tsp. oregano
- 2 c. sliced zucchini or broccoli
- 1 c. sliced mushrooms
- 1/2 c. tomato, diced
- 1/2 c. shredded cheese
Directions

1Cook onion until clear.

2Add fish, lemon juice, oregano, zucchini and mushrooms.

3Cover and simmer 10 minutes.

4Top with tomato and cheese.

5Cover and simmer 2 minutes (until cheese melts).
