- 2 large potatoes, peeled
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/3 c. uncooked rice
- 1 lb. ground beef
- 1 tsp. salt
- sliced onion
- 2 sliced carrots
- 2 c. tomato juice
Directions

1Slice potatoes in bottom of greased 1 1/2-quart casserole and sprinkle with 1/2 teaspoon salt and 1/8 teaspoon pepper.

2Add rice and then ground beef.

3Sprinkle in 1 teaspoon salt.

4Add onions and carrots, sliced.

5Pour tomato juice over all.

6Cover and bake 1 1/2 hours at 350°.
