Ingredients
- 2 tsp. olive oil
- 1 onion, thinly sliced
- 2 stalks celery, cut into 1-inch slices
- 1 (3 1/2 lb.) chicken, cut in 8 pieces
- 1/2 c. dry vermouth
- 3/4 c. chicken broth
- 1 tsp. minced garlic
- 1/2 tsp. dried thyme
- salt and pepper to taste
- 4 potatoes, peeled and cut into 1 1/2-inch cubes
Directions

1In large skillet, heat oil and saute onion and celery 3 to 4 minutes.

2Add the chicken.

3Increase heat and toss with vegetables 1 minute longer.

4Add vermouth and allow to boil 1 minute.

5Add broth, garlic, thyme, salt and pepper.

6Bring to boil; cover. Reduce heat to low and cook 10 minutes.

7Add potatoes.

8Stir and return to boil.

9Cover, reduce heat and simmer another 30 to 35 minutes.
