- 1 large Vidalia or other sweet onion
- 2 Tbsp. all-purpose flour
- 1 large egg, slightly beaten
- 1 c. saltine cracker crumbs
- vegetable oil
- commercial dark honey mustard or Ranch style salad dressing
Directions

1Peel onion, leaving root end intact.

2Cut onion vertically into quarters, cutting to within 1/2-inch of rooted end.

3Cut each quarter vertically into thirds.

4Place onion in boiling water 1 minute; remove and place in ice water 5 minutes.

5Loosen petals if necessary.

6Drain onion, cut side down.

7Place flour into a zip-top plastic bag.

8Add onion, tossing to coat.

9Chill 1 hour.

10Pour oil to depth of 3 inches into an electric fryer or heavy saucepan and heat to 375°.

11Fry onions 5 to 7 minutes or until golden brown. Drain on paper towels.

12Sprinkle with salt, if desired.

13Serve onions with dark honey mustard or Ranch style salad dressing.
