Ingredients

  • 4 medium onions, sliced (any sweet onion)
  • 12 saltine crackers, crushed
  • 1 stick butter
  • 1 can mushroom soup (undiluted)
  • 2 eggs
  • 1 c. milk
  • salt and pepper to taste
  • grated sharp Cheddar cheese

Directions

    Melt butter and cook onions in it until tender.

    Butter a casserole dish.

    Line with cracker crumbs.

    Add layer of onions, then layer of soup until dish is full.

    Beat eggs and add in milk, salt and pepper.

    Pour over top of casserole.

    Sprinkle cheese on top and add a few more cracker crumbs.

    Bake at 350° until brown and bubbly.
