  • 1/4 c. (1 stick) butter or margarine
  • 7 to 8 large yellow onions, cut in large chunks
  • 1/2 c. uncooked rice (not instant)
  • 5 c. salted boiling water
  • 2/3 c. half and half

Directions

    Melt butter in large skillet over medium heat.

    Add onions and saute until transparent.

    Remove from heat.

    Preheat oven to 225°. Cook rice in boiling salt water, drain well.

    Blend with onions, cheese and half and half.

    Taste to season with salt.

    Turn into shallow baking dish.

    Bake 1 hour.

    Great served with baked ham.
