  • 1 1/2 c. self-rising corn meal
  • 2 eggs
  • 8 oz. sour cream
  • 1 c. cream-style corn
  • 1 medium onion, chopped
  • 1 tsp. salt

Directions

    Mix together all ingredients and pour into greased, heated muffin pans.

    Cook 15 minutes at 400° and 15 minutes at 500°. This mixture will keep in refrigerator without onion for up to 2 weeks.
