  • 1 1/2 Lg Onion thinly sliced
  • 1/4 c Butter
  • 1 Pkg Jiffy Corn muffin mix
  • 1 Egg
  • 1/4 c Milk
  • 8oz can Cream Corn
  • 1 c Sour Cream
  • 1/2 t Salt
  • 1 c Shredded Cheddar Cheese

    Preheat oven to 425f.

    Saute onions in butter until soft on MHigh. Let cool.

    In bowl combine mix, egg, milk and cream corn. Spread in 8x8 greased pan.

    Mix sour cream, salt and 1/2c of cheese with cooled onions. Spread over muffin mix. Top with remaining cheese.

    Bake 20-30 min.
