Ingredients

  • 1 bag mini potatoes yellow (1.5 lbs)
  • 1 bag mini potatoes red(1.5 lbs)
  • 4 tbsp oil ( olive/ canola) your preference
  • 1 1/2 cup -2 cups chicken broth chicken/ beef I use chicken boiling hot
  • 1 sweet onion large, chopped
  • 6 clove garlic cloves
  • 1 1/2 tsp salt
  • 1 tsp black pepper
  • 1 tbsp butter or margarine melted

    Preheat oven to 375f

    Cut all potatoes in half and put in large bowl
  3. 3
    Mix following ingredients with potatoes
  4. 4
    Add to large oven dish with lid then add
  5. 5
    Cook covered in oven for 35 min then remove from oven and toss potatoes around
  6. 6
    Put back in oven uncovered until golden brown and liquid has evaporated.

    After removed from oven pull out garlic smush with a fork and add to melted butter and drizzle over potatoes and toss
