  • 1 1/2 pounds pearl or spring onions, trimmed
  • Butter for the dish
  • A small grating of nutmeg
  • 1 cup heavy cream

    Bring a pot of water to a boil and add salt.

    Preheat the oven to 400F.

    Drop the onions into the water and leave them there for a minute.

    Peel them, then put them in a buttered ovenproof dish large enough to hold them in one layer.

    Sprinkle them with salt, pepper, and a little nutmeg, then pour the cream over all.

    Bake until the top is brown and the onions are soft, about 30 minutes.
