- 3 c. sliced onions
- 1/4 c. butter
- 2 Tbsp. flour
- 2 eggs, separated
- 1 tsp. salt
- 1 c. heavy cream
- 1 (9-inch) pie shell, prebaked for 10 minutes
- 4 strips crisp bacon, crumbled
Directions

1Melt butter in skillet, add onions, cover and simmer over low heat for 10 minutes or until onions are transparent.

2Beat egg yolks with salt until yolks are light and thick.

3Stir in cream. Add onions and flour; stir enough to blend.

4Whip egg whites until stiff but not dry.

5Fold gently into onion mixture.

6Pour into baked and cooled pie shell.

7Sprinkle with bacon.

8Bake at 375° for 30 to 40 minutes or until golden brown and custard is firm.
