- 8 Tbsp. butter (divided use)
- 5 c. thinly sliced onions
- 1 1/2 c. crushed Ritz crackers
- 1 1/2 Tbsp. flour
- 1/2 c. chicken broth
- 2 large egg yolks
- 1 c. sour cream
- 1/4 tsp. nutmeg
- salt and pepper to taste
- 1 1/2 c. shredded Cheddar cheese
- 1 tsp. paprika
Directions

1Melt 4 tablespoons butter in a large skillet. Add onions and saute until soft (20 minutes).

2Melt remaining 4 tablespoons butter and toss with crackers.

3Press into a 9-inch pie plate. Stir flour into sauteed onions; cook 1 minute.

4Stir in chicken broth and cook until thickened and creamy (2 minutes).

5Remove from heat. Whisk together egg yolks and sour cream.

6Add nutmeg, salt and pepper. Add to onions and mix.

7Pour onion mixture into pie plate. Top with cheese and sprinkle with paprika.

8Bake at 350° for 35 to 40 minutes until lightly browned and bubbly.
