- 1 onion, chopped
- 1 cup long-grain rice
- 2 cups ham stock
- 2 tablespoons grated parmesan cheese (optional)
- black pepper, preferably freshly ground
Directions

1Combine rice, onions, and ham broth in a medium saucepan.

2Cook uncovered on medium-high heat until the broth boils.

3Stir, then simmer covered on low heat for 7 minutes.

4Stir, then simmer covered another 5 minutes.

5Stir in the Parmesan if desired.

6Add black pepper to taste.

7Let sit covered 5-7 minutes until all the broth has been absorbed.

8Fluff with a fork before serving.
