Onion Sandwich

- 24 slices egg bread
- 6 tablespoons mayonnaise
- 12 slices onions
- 1 cup parsley leaves minced

1USING A 1 3/4INCH COOKIE CUTTER, cut out rounds for the centers of the bread slices.

2Spread mayonnaise on each of the bread rounds with a small spatula.

3The diameter of the onion slices should approximate that of the bread rounds.

4Sprinkle each with salt and pepper.

5Place 1 onion slice on each half of the rounds.

6Cover each one with another bread round, mayonnaise side down, on top of the onion.

7Using the spatula, spread the outside rim of the sandwich with mayonnaise, coating fairly liberally.

8Roll the rim of each sandwich in parsley to coat.
