  • 1/2 c. butter
  • 1 1/2 Tbsp. flour
  • 1 Tbsp. Dijon or other dark mustard
  • 10 c. beef broth or 10 bouillon cubes plus 10 c. water
  • 4 large onions
  • salt and pepper to taste
  • Swiss cheese
  • bread slices

Directions

    Slice onions and saute until light brown; add flour, mustard and seasonings.

    Carefully add water or broth.

    Simmer for at least 1 1/2 to 2 hours or more.

    To serve, place soup in bowls; add slices of bread and cheese.

    Microwave each serving until cheese melts.
