- 4 to 6 medium onions, peeled and sliced
- 2 cans beef or chicken broth
- 2 cans water
- 3 Tbsp. butter
- pepper and garlic powder to taste
- 1 Tbsp. parsley
- 1/2 lb. Swiss or Mozzarella cheese
- 4 slices French bread
Directions

1Saute onions in butter until limp and tender.

2Add broth, water and seasoning.

3Simmer for 1 hour.

4(You really don't have to, but I like to let the flavors blend.)

5Ladle soup into ovenproof bowls; top with a slice of bread and cheese.

6Broil until cheese bubbles.
