- 4 large yellow onions
- 2 Tbsp. butter
- 1 Tbsp. flour
- 6 c. beef broth
- salt and pepper to taste
- 6 slices French bread
- 3/4 c. Swiss cheese, grated
- 1/4 c. Parmesan cheese, grated
Directions

1Simmer beef broth in saucepan on low, while preparing onions. Peel onions and slice thinly.

2Separate slices into rings.

3Saute onion rings in hot butter in skillet until softened.

4Lightly stir in flour.

5Add cooked onions to simmering broth.

6Cover and simmer another 20 minutes.

7Ladle soup into bowls.

8Place a round of bread on soup.

9Sprinkle with combined cheeses.

10Place bowls on cookie sheet and brown cheese under preheated broiler for 3 minutes, until cheese is bubbly.

11Serve immediately.
