  • 4 large yellow onions
  • 2 Tbsp. butter
  • 1 Tbsp. flour
  • 6 c. beef broth
  • salt and pepper to taste
  • 6 slices French bread
  • 3/4 c. Swiss cheese, grated
  • 1/4 c. Parmesan cheese, grated

Directions

    Simmer beef broth in saucepan on low, while preparing onions. Peel onions and slice thinly.

    Separate slices into rings.

    Saute onion rings in hot butter in skillet until softened.

    Lightly stir in flour.

    Add cooked onions to simmering broth.

    Cover and simmer another 20 minutes.

    Ladle soup into bowls.

    Place a round of bread on soup.

    Sprinkle with combined cheeses.

    Place bowls on cookie sheet and brown cheese under preheated broiler for 3 minutes, until cheese is bubbly.
