Onion Wine Soup

Ingredients
- 5 large onions, chopped
- 5 c. beef broth
- 1/2 c. celery leaves
- 1 c. dry white wine
- 1 Tbsp. vinegar
- 2 tsp. sugar
- 1 c. light cream
- 1 Tbsp. minced parsley
Directions

1Saute onions and add beef broth and celery leaves.

2Bring to a boil, then cover and simmer for 30 minutes.

3Puree mixture in blender.

4Return mixture to saucepan and blend in wine, vinegar and sugar.

5Bring to boil and simmer 5 minutes.

6Reduce heat.

7Stir in cream, parsley, salt and pepper.

8Heat thoroughly but do not boil.

9Yields 6 to 8 servings.
