  • 3 large eggs separated
  • 1/8 tsp cream of tartar
  • 100 grams cream cheese I used mascapone
  • 1/4 tsp salt

    Line baking tray with greaseproof paper and put the oven on to 150
  2. 2
    Put egg yolks, cheese & salt in a bowl and whisk on low until creamy and smooth
  3. 3
    In another bowl whisk egg whites and cream of tartar until stiff like meringue
  4. 4
    Carefully fold the whites in dollops into the yolk mix rotating the bowl.
  5. 5
    I did this in 4 stages.

    Put 6 big dollops onto the tray and press down slightly with egg spatula
  7. 7
    Put in oven and cook for about 30 minutes until golden brown then cool for few minutes before transferring to wire rack.

    Butter the flat sides and make sandwiches
