  • 1 diet pie crust
  • 3 c. water packed cherries, drained (reserve juice)
  • 2 1/2 Tbsp. tapioca
  • 1/8 tsp. salt
  • 1 1/2 Tbsp. Sucaryl solution
  • 1/4 c. cherry juice
  • 1/4 tsp. almond extract

Directions

    Combine cherries, tapioca, salt, Sucaryl, cherry juice and almond extract; let stand for 15 minutes.

    Pour filling into crust and cover top with foil to prevent drying out.

    Bake at 425° for about 45 minutes.
