- 3 c. enriched flour
- 4 tsp. baking powder
- 3/4 tsp. salt
- 1 c. sugar
- 1 egg, slightly beaten
- 1/4 c. grated orange rind
- 1 c. orange juice
- 1/3 c. salad oil or melted shortening
Directions

1Sift flour and measure; add baking powder, salt and sugar. Sift again.

2Combine egg, orange rind, juice and oil or melted shortening (slightly cooled).

3Pour into flour mixture and stir just enough to moisten; do not beat.

4Turn into greased loaf pan 9 1/2 x 5 1/2 x 3-inch.

5Bake in moderate 350° oven about 1 hour. Remove from pan.

6Cool.

7Best to wait a day to slice and serve.
