  • 3-5/8 ounces, weight All-purpose Flour
  • 1 teaspoon Baking Powder
  • 3-5/8 ounces, weight Butter (Room Temperature)
  • 3-5/8 ounces, weight Sugar
  • 2 whole Eggs, Separated
  • 2 whole Oranges, Zest And Juice

  • FOR THE TOPPING:
  • 2 Tablespoons Sugar
  • 1 cup Orange Juice

    Preheat oven to 350 degrees. Beat the sugar and the yolks until nice and pale. Add the butter and keep beating on medium. Add the orange zest and the orange juice and keep mixing it. Sift the flour with the baking powder, and add to the wet ingredients, folding with an spatula. Beat the egg whites to soft peaks and add to the batter, folding with the spatula. Put in the oven for about 20 minutes or until a toothpick inserted comes out clean.

    When the cake is done, sprinkle 2 tablespoons of sugar on top of the hot cake followed by 1 cup of juice on top.
