Orange Cashew Salad

  • 3 cups Mixed Green Leaves
  • 2 Oranges
  • 1 teaspoon Cumin
  • Salt And Pepper
  • 1/3 cups Cashew Nuts

Directions

    Cut or tear mixed greens into small pieces. Put in a bowl and set aside.

    Peel oranges and cut into small bite size pieces. Roast with cumin, salt and pepper on a dry frying pan over medium heat. No oil is required as the oranges contain enough juice to prevent them from sticking to pan. Cook oranges for about 5 minutes.

    Take oranges off pan and add to bowl of greens. Roast cashew nuts on same pan for 3-5 minutes or until slightly golden. Take cashew nuts off heat and mix with oranges and greens. Serve immediately.
