Orange Chicken

Ingredients

  • 1 pound boneless skinless chicken breast cubed
  • 1/2 teaspoon salt
  • 1 teaspoon crushed black pepper
  • 2 tablespoons extra-virgin olive oil
  • 2 cloves minced garlic
  • 1/2 cup orange juice no pulp
  • 1/4 cup pineapple juice
  • 3/4 cup honey to your taste
  • 1/4 cup soy sauce
  • 1/4 cup rice vinegar
  • 1/2 teaspoon ground ginger
  • 2 teaspoons crushed red pepper
  • 2 tablespoons cornstarch
  • 2 teaspoons sesame seeds
  • pineapple chunks Optional-

Directions

    In a pan, warm olive oil. Add cubed chicken to pan, sprinkle with salt and pepper. Cook chicken until done and no longer pink.

    In a separate bowl add garlic, orange juice, honey, soy sauce, rice vinegar, ground ginger and red pepper. Stir ingredients until mixed well. Once mixed add small amount of cornstarch to help thicken.

    Pour sauce mixture over chicken and simmer for 5-10 minutes. We have also added pineapple chunks during the simmering stage for added flavor. Sauce will thicken as it simmers

    Remove from heat and serve over a bed of rice. Top with sesame seeds. You may spoon sauce over rice if desired.
