Orange Chicken Spring Rolls

- 1 package (10 To 14 Oz. Package) Rice Noodles, Cooked According To Directions
- 15 leaves Romaine Lettuce, Cut In Half
- 1 cup Washed Cilantro
- 2 whole Carrots Halved And Then Cut In Thin Long Strips
- 1/2 cups Green Onions, diced
- 4 cups Cooked Chicken
- 1 package (about 12 Oz. Package) Rice Paper Wrappers
- 2 cups Asian Orange Sauce, Like You Would Put On Orange Chicken, You Can Use A Jar Or A Homemade Recipe (Included Below) Or A Different Kind Of Sauce
- FOR THE HOMEMADE SAUCE (optional):
- 1- 1/2 cup Water
- 2 Tablespoons Orange Juice
- 1/4 cups Lemon Juice
- 13 cups Rice Vinegar
- 2- 1/2 Tablespoons Soy Sauce
- 1 Tablespoon Grated Orange Zest
- 1 cup Packed Brown Sugar
- 1/2 teaspoons Minced Fresh Ginger Root
- 1/2 teaspoons Minced Garlic
- 2 Tablespoons Chopped Green Onion
- 1/4 teaspoons Red Pepper Flakes
- 3 Tablespoons Cornstarch, Dissolved In 2 Tablespoons Water
Directions

1Most of your time will be spent in prep time.

2Once everything is prepped, you just roll them up and eat them!

3Hydrate noodles according to package directions.

4I just boil some water, turn it off and throw the noodles in for about 57 minutes.

5Then drain.

6Wash lettuce leaves and cut ends off, they should be about 5 long.

7Wash cilantro and carrots, then slice carrots.

8Wash and dice green onions.

9Prepare orange sauce while doing all the prep cutting.

10If you are making your own homemade orange sauce, put all the sauce ingredients (except the cornstarch) in a pot and bring to a boil.

11Then add the cornstarch and water mixture to thicken.

12Now its rolling time!

13Have a pot or pan with really hot water at your assembly line.

14Dip your rice paper wrapper in the hot water and have a little water down on your clean prep surface.

15After dipping the paper, be careful because it will stick to itself; lay flat on the work surface.

16Start by putting one lettuce leaf in the center of the paper, top with about 5 carrot pieces, a couple sprigs of cilantro, about a teaspoon of green onions, about 1/4 cup of chicken, about a 1/2 cup of rice noodles and top with approximately 1 tablespoon of orange sauce.

17Then roll up to look like an egg roll.

18You can serve immediately.
