Orange Chiffon Layer Cake

- 2 egg whites
- 1/3 c. sugar
- 2 c. sifted cake flour
- 1 c. sugar
- 3 tsp. baking powder
- 1 tsp. salt
- 1/2 c. orange juice
- 1/2 c. skim milk
- 1/2 c. Puritan oil
- 2 egg yolks
Directions

1Preheat oven to 350°.

2In a small bowl, beat egg whites with 1/3 cup sugar until thick and glossy, but not stiff.

3Set aside. Combine flour, 1 cup sugar, baking powder and salt in a large mixing bowl.

4Add orange juice, milk, Puritan oil and egg yolks. Mix at medium speed for 3 minutes.

5Scrape bottom and sides of bowl often.

6Fold egg whites into batter until well blended.

7Pour into two greased and floured 8 x 1 1/2-inch layer pans.

8Bake at 350° for 25 to 30 minutes until center springs back when touched lightly.

9Cool 10 to 20 minutes, then remove from pans.
