Ingredients

  • 3/4 c. butter
  • 3/4 c. orange marmalade
  • 1/2 c. flaked coconut
  • 1/2 c. sugar
  • 2 eggs
  • 1 1/2 c. flour
  • 2 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 1/2 c. milk
  • 1/4 tsp. orange extract or 1 tsp. orange juice

    Melt 1/4 cup of the butter in 9-inch ring mold.

    Add marmalade and coconut; mix well and spread evenly.

    In large mixer bowl, combine sugar, eggs and 1/2 cup butter.

    Blend well at lowest speed of mixer.

    Add flour, baking powder and salt alternately with milk and orange extract; blend thoroughly at lowest speed of mixer.

    Spoon batter evenly over marmalade mixture.

    Bake at 375° for 35 to 45 minutes.

    Cool 5 minutes; invert onto serving plate. If desired, serve with whipped cream or ice cream.
