Orange-Cranberry Nut Bread

  • 2 c. flour
  • 1/2 tsp. salt
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1 c. sugar
  • juice and grated rind of 1 medium orange or 1 1/2 small ones
  • 2 Tbsp. salad oil
  • boiling water
  • 1 beaten egg
  • 1 c. chopped raw cranberries
  • 1 c. chopped nuts

Directions

    Sift together 2 times flour, salt, baking powder, baking soda and sugar.

    Add juice and rind of orange.

    Add salad oil with enough boiling water to make 1 cup.

    Add egg; mix well.

    Stir in cranberries and nuts.

    Bake 1 hour in a greased or sprayed loaf pan at 325°.

    Store 24 hours before serving.

    Serve with cream cheese.
