Orange-Date-Nut Bread

- 6 oz. dates, chopped
- 1/2 c. boiling water
- 1 tsp. margarine
- 1 egg
- 1/4 c. sugar
- 1/2 c. orange juice concentrate, thawed
- 1 1/2 c. flour
- 1/4 tsp. salt (optional)
- 1 tsp. baking soda
- 2 1/2 oz. walnuts, chopped
Directions

1Pour boiling water over the chopped dates.

2Stir until lukewarm.

3Beat in by hand margarine, egg, sugar and orange juice concentrate.

4Sift together dry ingredients, except nuts.

5Fold dry ingredients into date mixture.

6Add chopped nuts and blend thoroughly.

7Pour into 9 x 5-inch loaf pan sprayed with Pam and bake in a 350° oven for 45 to 55 minutes, or until toothpick inserted in center comes out clean.

8Cool in pan 5 minutes.

9Better if eaten immediately or frozen for later use.

10Yields 12 servings.
