Orange-Date Oat Bars

Ingredients
- 1/2 cup orange juice
- 1 13 cups chopped dates
- 1 Tbs. grated orange zest
- 2 1/2 tsp. ground cinnamon
- 1 13 cups old-fashioned rolled oats
- 1 1/4 cups all-purpose flour
- 1 cup packed dark brown sugar
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 3/4 cup nonhydrogenated vegetable shortening
- 1/2 cup chopped pecans
Directions

1Preheat oven to 350F.

2Spray 9-inch baking dish with nonstick spray.

3Simmer juice, dates, zest, 1/2 tsp.

4cinnamon and 1 cup water 15 minutes over medium heat, or until thickened.

5Pulse oats, flour, sugar, baking soda, salt and remaining cinnamon several times in food processor.

6Add shortening, and blend until combined.

7Press half oat mixture in prepared pan.

8Top with date mixture.

9Add pecans to remaining oat mixture.

10Press on top.

11Bake 50 minutes, or until top is golden brown.

12Cool, and cut into bars.
