  • 23 cup butter softened
  • 113 cups sugar
  • 23 cup orange juice
  • 3 tablespoons lemon juice
  • 1 teaspoon orange zest grated
  • 1 teaspoon lemon zest grated
  • 2 large eggs
  • 2 cups cake flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup coconut flaked
  • 1/4 cup sugar
  • 2 tablespoons orange juice
  • 1 tablespoon lemon juice
  • 4 teaspoons orange zest grated
  • 1 cup heavy whipping cream whip

Directions

    In a large mixing bowl, cream butter and sugar.

    Add juices and peel; mix well (mixture may appear curdled).

    Add eggs, 1 at a time, beating well after each addition.

    Sift flour with baking powder and salt; add to creamed mixture and mix well.

    Pour into 2 greased and floured 8 inch cake pans.

    Bake at 375F (190C).

    for 25 to 30 minutes or until cake tests done.

    Cool in pans for 10 minutes before removing to a wire rack to cool completely.

    Combine frosting ingredients and frost.
