Orange Easter Pudding

- 6 Temple oranges, cut into cubes
- 1 c. sugar
- 4 eggs
- 4 Tbsp. cornstarch
- 1 qt. milk
Directions

1Mix cut up oranges with 1/2 cup sugar; let rest in refrigerator overnight.

2Add thickening mixture made from 4 egg yolks, 4 tablespoons cornstarch and 1/2 cup sugar; mix well.

3Add 1 quart hot milk (4 cups); cook on low fire until thick.

4Cool. Add 1 teaspoon vanilla; pour over oranges.

5Beat egg whites until foamy.

6Add 1/4 cup sugar, a little at a time.

7Pour over pudding. Seal edges.

8Bake at 400° for 15 to 20 minutes.
