Orange Fruit Salad Dressing

  • 3/4 c. sugar
  • 2 Tbsp. flour
  • 2 Tbsp. butter
  • 1/4 tsp. salt
  • 2 eggs, separated
  • 1/2 c. boiling water
  • juice and grated rind of 1 large orange

Directions

    Mix flour, sugar and salt in double boiler.

    Beat egg yolks well.

    Add the juice and rind to the yolks.

    Gradually stir into sugar mixture.

    Add the water and butter.

    Cook until thick, stirring constantly.

    Cool.

    Beat egg whites until they form peaks, adding 2 tablespoons sugar.

    Fold into dressing.

    Good on fruit or congealed salad.
