Orange-Ginger Custard

- 6 medium eggs, beaten
- 1/2 heaping cup sugar
- 1 c. whipping cream
- 1 Tbsp. butter
- 1 Tbsp. fresh lemon juice
- 1 tsp. orange rind, grated
- 6 pieces candied ginger
- 3 medium oranges, peeled and sectioned
Directions

1Combine eggs, sugar, heavy cream, softened butter and lemon juice in a mixing bowl.

2Butter 6 (5 ounce) baking cups and break small pieces of candied ginger into bottom of each cup.

3Pour egg mixture on top.

4Divide orange sections and place on top each cup. Place cups into a pan filled with enough cool water to come up an inch from the top of the cups.

5Bake 35-40 minutes at 350°. Remove and cool.

6Refrigerate until served.
