- 2 c. flour
- 2 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 tsp. ground ginger
- 1/2 c. sugar
- 1 egg, beaten
- 2/3 c. milk
- 1/2 c. orange juice
- 2 Tbsp. grated orange rind
- 2 Tbsp. minced candied ginger (optional)
Directions

1Combine in large bowl, making a well in the center, the first five ingredients.

2Combine remaining ingredients and pour into well.

3Mix all until moistened.

4Spoon into greased muffin tins, 2/3 full.

5Bake at 375° for 15 minutes.

6Yields 12 muffins.
