Orange Glazed Meatloaf

Ingredients

  • 1 1/2 lb ground beef
  • 1 cup fresh breadcrumbs
  • 1 None onion, finely chopped
  • 1/4 cup orange juice
  • 1 None egg
  • 1 tbsp fresh parsley, chopped
  • None None FOR THE ORANGE GLAZE
  • 3 slices orange, halved
  • 2 tbsp brown sugar
  • 2 tbsp orange juice
  • 2 tsp tomato paste
  • 1/4 tsp ground cinnamon
  • 1/4 tsp ground cardamom
  • None None salad or steamed vegetables, to serve

Directions

    Preheat oven to 350°F. Grease an 8 x 5 1/2 inch loaf pan.

    Mix together all meatloaf ingredients until combined. Season. Press into prepared pan and bake for 30 mins.

    Arrange orange slices on top of meatloaf. Whisk together remaining glaze ingredients and spoon over top. Bake for 15 mins. Let rest in pan for 10 mins then slice. Serve cold with salad or hot with vegetables.
