Orange Madeleines

  • 1/2 cup sugar
  • 3 eggs
  • 1 orange zest
  • 1 tablespoon orange blossom water
  • 3/4 cup wheat flour
  • 1 teaspoon baking powder
  • 7 tablespoons melted butter
  • 1 pinch salt
  • 1 tablespoon honey
  • powdered sugar for dusting

    Preheat the oven to 190C.

    Sift flour, baking powder, and salt into a small bowl, set aside.

    Place the butter in a saucepan, melt over low heat.

    Once melted, remove from heat and let cool slightly.

    Put sugar and eggs in a mixer and beat for about 3-5 minutes, until they thicken and become like mousse.

    Mix in the orange zest, and then gradually add the sifted flour with the baking powder and salt until everything is well mixed.

    Mix a little of the egg mixture into the melted butter with the honey and orange blossom water, and pour it back in the egg mixture and beat some more. Remove to a bowl and put the dough in refrigerator for 20 minutes.

    Fill the madeline pan and bake in the oven for 8-10 minutes.

    Remove, and once cool, sprinkle the Madeleines with powdered sugar.
