Orange Peel Bread

  • 5 to 6 oranges
  • 1 1/2 c. sugar
  • 1 Tbsp. butter
  • 1 egg
  • 2 c. milk
  • 4 c. flour
  • 4 tsp. baking powder
  • 1/4 tsp. salt

    Peel outer skins of oranges with vegetable peeler to fill one cup easily.

    Chop into small pieces and put in small pan with enough water to cover.

    Cook 15 to 20 minutes until tender.

    Add 1 cup sugar and boil 10 minutes until syrupy.

    Cream butter with 1/2 cup sugar; add egg and milk.

    Mix flour, baking powder and salt and add to butter, beating well.

    Add orange peel syrup.

    Divide batter between two 8 1/2 x 4 1/2-inch greased bread pans.

    Bake in 325° oven for 40 to 50 minutes.
