Orange Pickled Beets

Ingredients

  • 1 c. sugar
  • 1/3 c. white cider vinegar
  • 1/3 c. tarragon vinegar
  • 2/3 c. orange juice
  • 1 tsp. whole cloves
  • 1 (No. 2) can beets

Directions

    Boil above ingredients until syrup becomes quite thick. Remove cloves.

    We used beet slices for this and with the small inside circle of a doughnut cutter (it slips out easily) we make tiny round circles of beets.

    Let the beets stand for 48 hours in the syrup, then drain and serve.
