Orange Pork Chops

  • 4 pork loin chops (3/4-inch thick or 8 thins)
  • 1 Tbsp. oil
  • 1 large onion, cut 1/4-inch thick
  • 1/4 c. dry or cooking sherry
  • 1/4 c. soy sauce
  • 1/4 c. orange marmalade

Directions

    Trim fat and brown chops in oil.

    Remove chops and keep drippings.

    Add onion and saute.

    Return chops to pan.

    Add rest of ingredients.

    Heat to boiling.

    Reduce heat to medium-low; cover skillet and simmer 30 minutes or until tender.

    Remove cover; increase heat to medium-high and continue to cook until liquid is almost evaporated, about 3 minutes.
