- 4 pork loin chops (3/4-inch thick or 8 thins)
- 1 Tbsp. oil
- 1 large onion, cut 1/4-inch thick
- 1/4 c. dry or cooking sherry
- 1/4 c. soy sauce
- 1/4 c. orange marmalade
Directions

1Trim fat and brown chops in oil.

2Remove chops and keep drippings.

3Add onion and saute.

4Return chops to pan.

5Add rest of ingredients.

6Heat to boiling.

7Reduce heat to medium-low; cover skillet and simmer 30 minutes or until tender.

8Remove cover; increase heat to medium-high and continue to cook until liquid is almost evaporated, about 3 minutes.
