  • 3/4 cup orange juice
  • 2 teaspoons orange zest
  • 3 cups Basic Gluten-Free Flour Mix (page 19)
  • 3/4 teaspoon xanthan gum
  • 1/3 cup granulated sugar
  • 2 tablespoons double-acting baking powder
  • 1/4 teaspoon salt
  • 1/3 cup canola oil
  • 2 tablespoons rice milk
  • Sanding sugar

Directions

    Preheat the oven to 400F.

    Line a baking sheet with parchment paper.

    Whisk together the yogurt, orange juice, and orange zest.

    Set aside.

    In a large bowl, whisk together the flour mix, xanthan gum, granulated sugar, baking powder, and salt.

    Add the orange juice mixture and the canola oil, and stir with a wooden spoon until combined but still clumpy.
