- 2 (8 oz.) potatoes
- 1 (6 1/2 oz.) can boneless, skinless salmon
- 2 Tbsp. soy sauce
- 1 tsp. lemon juice
- 1/4 tsp. Oriental sesame oil
- snipped chives
- red pepper mix (optional)
Directions

1Wash, dry and prick potatoes with a fork.

2Bake or microwave until tender.

3While potatoes are cooking, drain and flake salmon. Add soy sauce, lemon juice and Oriental sesame oil.

4Toss and set aside.

5Once potatoes are done, split open.

6Squeeze gently to fluff.

7Top with salmon mixture, dividing equally.

8Sprinkle with snipped chives and red pepper mix.

9Serves 2.
